Cinnamon Coffee Cake Loaf

This Cinnamon Coffee Cake Loaf is easy and delicious. Using Saigon cinnamon gives it a full and sweet cinnamon flavor. This extra flavor makes you think that it came from a professional bakery. The buttermilk keeps it moist and not dry like some coffee cakes.

It makes the perfect dessert or snack to go along with your favorite tea. Your guests will ask for your recipe and a second cup of tea as well.

Makes 1 Loaf

Ingredients:
2 Cups All-purpose Flour
1 ¼ Cups White Sugar, Divided
3 Teaspoons Baking Powder
3 ½ Teaspoons Saigon Vietnamese Cinnamon, Divided
1 ¼ Teaspoons Sea Salt
2 Eggs
1 Cup Buttermilk
⅓ Cup Canola Oil
2 Teaspoons Vanilla Extract
3 Tablespoons Butter, Melted

Directions:
Preheat the oven to 350°F

In a large mixing bowl, add the flour, 1 cup of the sugar, the baking powder, 1 ½ teaspoons of the Saigon cinnamon and the salt. Use a fork or whisk to combine.

In a medium mixing bowl, add the eggs, buttermilk, oil and vanilla. Whisk to combine well. Pour this mixture into the dry ingredients. Combine until just smooth. Don’t over-mix.

Grease a 9″x5″ loaf pan. Pour half the batter into the pan.

In a small mixing bowl, add the remaining ¼ cup sugar and 2 teaspoons of the cinnamon. Stir in the melted butter. Drizzle half of the mixture over the batter. Use a knife to swirl into the batter. Pour the remaining half of the batter on top. Drizzle with the rest of the cinnamon-sugar mixture. Use a knife to swirl into the top half of the batter.

Bake for 55-60 minutes or until a toothpick inserted near the center comes out clean. Check at 55 minutes. Let cool for 10 minutes, so it comes out of the loaf clean. Transfer the loaf onto a wire rack. Let cool, then cut and enjoy warm. Be sure to enjoy with a cup of your favorite tea.
