Sichuan Peppercorns
Sichuan Peppercorns or Szechuan Peppercorns (zanthoxylum piperitum) come from the berries of a small, prickly ash tree which grows in the Szechuan region of China. This central province is well known for the spicy contributions it offers to Chinese cuisine.
The Szechuan peppercorn has a spicy, woody, and a delightful citrus aroma that gives a tingling sensation to the tip of the tongue. They are an essential ingredient in Chinese five spice powder and are found in Kung Pao Chicken and in the Korean Dan Dan Noodles.
Ground Sichuan peppercorns are a key ingredient in some versions of Chinese Five Spice. Those versions can be too spicy, so we use black pepper in our blend.
For best results, grind before using as a wonderful accent on baked chicken, steaks, potato dishes, soups and casseroles. Try substituting for Black Pepper for an interesting flavor twist.
