Celery Seed Cole Slaw and Friends
Cole Slaw is a standard Summer dish to serve. Most have celery seed, but some don’t. Our Celery Seed Cole Slaw and Friends has it since it adds that classic flavor without having to add celery. Even when we include chopped celery, the seed adds a little extra flavor that takes us back to family recipes at Summer family picnics and parties with burgers, hotdogs, ribs, BBQ chicken and cole slaw. If you top your pulled pork sandwiches with slaw, make sure the green pepper is finely sliced, or leave it out.
We call this version “and Friends”, since it has a few extras for a fuller flavor you don’t find in all recipes. The optional Jicama adds a sweet, crunchy flavor. It’s not everyone’s cup of tea, but Jicama is popping up in more salad recipes. Using Green Onions instead of a yellow or white onion also adds a bit of a twist. They keep the needed onion flavor in the slaw, since yellow onions can be strong and bitter at times.
Cole Slaw recipes are everywhere and usually simple, you might find that adding your own extras will punch up the flavor and make it your own even more. Enjoy.
1 cup mayonnaise
1½ tablespoons apple cider vinegar
2 tablespoons sugar, or to taste
¾ teaspoon celery seeds
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
½ medium green cabbage, very thinly sliced (about 4 cups)
½ medium red cabbage, very thinly sliced (about 4 cups)
1 Cup Jicama, thinly sliced into 1″ long pieces (optional) If used, decrease cabbage by ½ cup each type.
2 medium carrots grated, or finely sliced
½ cup chopped green bell pepper
⅔ cup thinly sliced green onions
Whisk together mayonnaise, vinegar, sugar, celery seeds, salt, and pepper in a mixing bowl. Mix well. Combine cabbage, carrots, green pepper and green onions. Add the dressing to the mixture. Toss to coat. Adjust salt and pepper to taste. Cover and refrigerate until ready to serve. Can be made 2-3 hours ahead of time.
