Amchur, also known as Amchoor or Mango Powder, is dried, unripe, green mango. It is typically used sliced or powdered in Indian and Southeastern Asian cuisines.

It has a sweet-sour scent, with a slightly sweet, fruity, acidic flavor. Amchur is used in primarily Indian cooking to make curries, chutneys, soups, marinades and as a sprinkling condiment. It adds a tangy, acidic flavoring just as lemon and lime adds to recipes. Most recipes ask for a pinch or a small amount.

It is used in dal (lentil) recipes, as well as in samosas. When used as a marinade, it also acts as a tenderizer for meats, poultry and fish. You will also find it in Indian pastries. With the popularity of Indian food in many countries, Amchur is being used in other cuisines where you need a bit of tang or tartness. You can use it as a substitute for lemon, lime or other citrus powder, as well as for sumac, which also has a slightly bitter tang and used in Middle Eastern cooking.
