Ancho Chile Peppers

Ancho Chile Peppers are the most commonly used chile pepper in Mexican cooking. As the dried version of the Poblano Pepper, it can be used whole, crushed or ground. The color is anywhere from dark red to very dark brown. It has a medium heat. On a 1-10 scale, it comes in about a 3, or about 1000-4000 SHU.

Anchos are used in soups, stews, sauces, salsas, enchiladas, taco, or any Mexican or Southwest dish needing a bit of spiciness and great chile flavor. For most recipes asking for whole anchos, you might have to rehydrate them since they are sold dried. To rehydrate them, pour boiling water over them and let them sit for about 10 to 15 minutes.
