Cardamom Seed (Elettaria cardamomum) comes from the Green Cardamom Pod. Cardamom is native to India, but is now widely grown in, Indonesia, Madagascar, Guatemala and other Latin American countries. It is one of the most expensive spices, due to all the manual work involved in its growing and harvest. You can use the seeds whole, crushed or ground, depending on the recipe.

Cardamom Seed is used in many Indian dishes including curries. They are also used in Thai and other Southeast Asian recipes. The seed is used in Turkish cooking, as well as in their coffee and teas. You will find them in Northern African and Moroccan spice blends.

As a very savory spice, you will find cardamom in a wide variety of dishes from soups, stews and vegetables to rice dishes, chicken, seafood and other meat recipes. You will also find it in sweet dessert recipes, and even some apple pies.
