Citric Acid, also known as Sour Salt, is most commonly used in canning and in recipes calling for citrus flavors. It is also a natural preservative. You will find that it is used is recipes calling for some tartness or sour notes. It is frequently used as a flavoring additive in foods and soft drinks for some tartness. It is added to many citrusy spice blends to add the extra tartness when the lemon, lime other fruit doesn’t provide enough.
It is naturally found in a variety of vegetables and fruits, especially citrus fruits like lemons, limes, oranges and pineapples as these have the highest concentrations.
