Citrus Brining Herbs
We crafted our Citrus Brining Herbs to have a citrusy, savory flavor. This version is just the spices, and Salt-Free, leaving you to either add your own salt and sugar, or use as is. For traditional brining, use about 4 Tablespoons of the spices with 1 cup of Kosher Salt and ½ cup of Sugar per 1 gallon of water. If you are not using a brining recipe, measure enough water to completely cover the turkey, chicken, pork, or other protein. Adjust the spices to match the amount of water you use.
If you use salt and sugar, bring the water to a boil in a large pot. Add the spices and stir until the salt and sugar have dissolved. Remove from heat. Let cool to room temperature before pouring over the turkey or other protein in a non-reactive container or brining bag. You can add some ice to cool it faster.
Cover, refrigerate and let sit in the brining solution for about an hour per pound of protein. When the brining time is done, remove turkey or other protein from the solution. Discard the brining solution, thoroughly rinse and pat to dry. Refrigerate again until you are ready to cook, allowing the outside to dry completely.
