Roasted Pork Tenderloin with Strawberry Apple Relish
Roasted Pork Tenderloin with Strawberry Apple Relish is savory and sweet. We love roasting and grilling tenderloins since they cook fast, turn out tender and can have a variety of side dishes to compliment the flavor of the rubs. For this recipe, we used our The Other Pork Rub. We blended this rub specifically for pork and ham to impart a wonderful flavor with just a touch of chile powder.
The Strawberry Apple Relish makes a wonderful topping for the tenderloins. Apples naturally compliment pork, but so do strawberries. Their fruity sweetness pairs well. The diced cucumber gives the relish a savory touch.
Yield: 4-6 servings
2 Pork Tenderloins (about 1 pound each)
3 Tablespoons of The Other Pork Rub
1 Cup Fresh Strawberries, Sliced
½ Cup Granny Smith Apple, Diced
½ Cup Gala Apple, Diced
½ Cup English Cucumber, Seeded and Diced
1 Tablespoon Lemon Juice
1 Teaspoon Sugar (optional)
Trim the tenderloins, removing any silverskin and fat. Rub The Other Pork Rub all over the tenderloins. Place on a large plate or marinating container. Cover and refrigerate for 1-2 hours to allow the flavors to develop. While the tenderloins are resting, make the relish.
In a medium mixing bowl, place the sliced strawberries, diced apples & cucumber, lemon juice and sugar. Mix well, cover and refrigerate until needed.
Transfer the tenderloins to a shallow roasting pan. Roast uncovered, at 400° for 30-35 minutes or until a thermometer reads 160° in the middle of the thickest part. When done, remove from the oven, spoon the juices over the tenderloins, cover with foil and let stand for 10 minutes. When serving, slice at an angle. Place a portion of the slices on each plate, spooning some of the juices on the slices. Serve with a generous spoonful or two of the Strawberry Apple Relish.
