Chipotle Honey Nut Chicken Breasts

Our Chipotle Honey Nut Chicken Breasts are fast and easy to make. They turn out moist and delicious. We use our Chipotle Honey Rub for the seasoning. The granulated honey adds an extra honey sweetness to the nutty coating and the spices give it a nice savory touch. It also browns up easily for an attractive plated look. Just add a rice side dish, like a pilaf and a green vegetable and your guests will be asking for seconds.

Serves 4

Ingredients:
1 Cup Dry Roasted Honey Peanuts
½ Cup Plain Bread Crumbs (Like Progresso)
2 Tablespoons Sheffield’s Chipotle Honey Rub
2 Eggs
1 Tablespoon Hot Sauce (We Use Tabasco)
1 Tablespoon Milk
½ Cup All Purpose Flour
3 Tablespoons Olive Oil
2 Pounds Boneless Skinless Chicken Breasts (2 to 4 Depending on Size). If they are large, slice them in half horizontally to make 4.

Directions:
Pre-heat oven to 350ºF.

Place the peanuts, breadcrumbs, and Chipotle Honey Rub in a food processor. Process about 15 to 30 seconds until the peanuts are finely chopped and the mixture is well combined. If not fine like the breadcrumbs, pulse another 5 to 10 seconds. Pour mixture onto a shallow dinner or pie plate.

Add the eggs, hot sauce, and milk to a shallow bowl. Whisk to combine well. Pour the flour on another shallow dinner or pie plate.

Heat a large non-stick skillet on medium heat. Add the olive oil.

Dredge the chicken breasts in the flour. Shake off any excess. Dip the chicken breasts into the egg mixture, then place in the Chipotle Honey Nut mixture. Turn over to coat evenly on both sides.

Carefully transfer the coated chicken breasts to the skillet. Brown about a minute or two on each side. Watch carefully so they don’t burn. You only want them golden to medium brown. The granulated honey in the seasoning will burn if you brown them too long.

Transfer to a foiled lined baking sheet. We give the foil a light spray of cooking spray so they don’t stick to the sheet. Bake for 12 to 15 minutes, or until the internal temperature in the thickest part reads at least 165ºF using an instant-read thermometer.

Serve with your favorite side dishes, like a rice pilaf and a seasonal green vegetable. Enjoy!
