Marinated Tomatoes with Lemon and Summer Savory
Marinated Tomatoes with Lemon and Summer Savory is a very simple recipe, yet when you can find fresh, great-tasting tomatoes, you need to have a recipe ready worthy of good tomatoes. Anyone can salt and pepper them, or even just pour a bit of Italian Dressing on them, but what if you want a marinade with a twist? Well, this is it.
Traditional herbs, plus a touch of red pepper, makes this a fresh and light tomato salad recipe. This Marinated Tomato salad has just the right balance between sweet and savory. The lemon juice provides a citrusy touch and the bit of Red Pepper powder adds a little zip to make this dish stand out among other tomato salads you may have made.
You can make this like a caprese style salad by adding some fresh mozzarella cheese and a few fresh leaves of basil.
Ingredients:
1 pound of fresh tomatoes (about 3 medium), cut into wedges
1/4 cup fresh lemon juice
1 teaspoon sugar
1 teaspoon extra virgin olive oil
1/4 teaspoon dried Summer Savory
1/4 teaspoon Sea Salt
1/8 teaspoon ground New Mexico (or other) Mild Red Pepper
1 garlic clove, minced
Directions:
Place the tomato wedges in a medium bowl.
Pour lemon juice and remaining ingredients into a bowl and whisk until combined. Pour dressing over tomatoes and toss gently to coat. Let stand 1 hour, stirring occasionally. Serve and enjoy.
