Butterfly Pea Flower tea, also known as Asian Pigeon-Wing, is a healthy, caffeine-free herbal tea, made from the flower of the same name, which is native to Thailand and other Southeast Asian countries. When steeped, the tea has a blue color from light to dark blue depending on how long you steep the flowers. The flavor is somewhat earthy and woody. It is also used to color other beverages. It has been made into a healthy drink for centuries but has only recently has found its way outside the region.

It is traditionally mixed with lime or lemon, which changes the color from blue to purple. It’s also steeped with Lemongrass. Some sugar or honey is added for sweetness. Freeze the tea in ice cube trays, then add the cubes to other beverages and watch the drink change color as the ice melts.

There are many ways to make it into an iced tea, with other fruits and flavors added, but we prefer to drink it with the traditional lemon/lime & sugar.

The flowers are also used to add a blue color to rice and other dishes. It is also used to make a blue dye.

For many years, the Butterfly Pea Flower has been drank for its healthy properties. And while we don’t make any claims, it contains the antioxidant proanthocyanidin, which promotes collagen growth and skin cell elasticity. Acetylcholine in this plant which research has shown promotes brain function and memory. It is also drank to help reduce anxiety, improve heart health, and promote vascular blood flow. Hot Tea Steeping Instructions: Put 12 dried flowers (about 1 teaspoon) for each 8 to 10oz of water in your tea cup or teapot. Using a tea infuser to hold the flowers make it easier. Pour freshly boiled water over the flowers. Steep for 10-15 minutes. Remove the infuser or strain the tea to remove the flowers. Notice the deep blue hue of the water. Add a splash of lime or lemon juice, and a bit of sugar for sweetness. The lime or lemon juice turn the color from blue to purple.

Iced Tea: Steep as you would for hot tea, then add ice, and garnish with a slice of lime.
