Pumpkin Pecan Muffins

Pumpkin Pecan Muffins are delicious any time of the year, but we usually eat pumpkin baked goods in the Fall season. One taste of these and you’ll want to make them during the year as well. The pecans add a nice nutty flavor to the pumpkin spices and the crumb topping.

There is enough batter to make 6 large muffins, or up to 8 or so standard size. It depends on the size of the muffin cups you use. If you bake regular size muffins, your baking time will be closer to the 25 minutes. If you make larger muffins, you might need the extra 5 minutes. Watch the time and test after 25 minutes.

Makes 6-8 Muffins

Ingredients:
2 ½ Cups All-purpose Flour
¼ Cup Brown Sugar, Packed
½ Cup Sugar
2 Teaspoons Pumpkin Pie Spice
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder
½ Teaspoon Salt
2 Large Eggs, Room Temperature
1 Cup Canned Pumpkin
½ Cup Buttermilk
¼ Cup Canola Oil
1 Teaspoon Vanilla Extract
½ Cup Pecans, Chopped

Topping:
¼ Cup All-purpose Flour
⅓ Cup Brown Sugar Packed
⅓ Cup Pecans, Finely Chopped
¼ Cup Cold Butter, Cubed

Directions:
Pre-heat the oven to 375 degrees. Set the oven rack in the middle position.

In a large mixing bowl, combine the flour, brown sugar, sugar, pumpkin pie spice, baking soda, baking powder and salt. In medium mixing bowl, combine the eggs, pumpkin, buttermilk, oil and vanilla. Stir this mixture into the dry ingredients. Stir until all ingredients are moistened, but not over mixed. Fold in the pecans. Fill 6 to 8 paper-lined large muffin cups three quarters full. The number of muffins depends on size of the muffin cups you use.

For the topping, in a medium mixing bowl, add the flour, brown sugar and pecans. Using a pastry cutter, cut in the butter cubes until crumbly. Sprinkle evenly over the muffin batter.

Bake at 375° for 25 minutes. Insert a toothpick or bamboo skewer into the center of a muffin. If it comes out clean remove from the oven. If not, bake for another 5 minutes and test again.

Cool for 5 minutes, them transfer the muffins to a wire rack. Serve warm, with your favorite cup of tea.
