BBQ Chicken Flatbread

BBQ Chicken Flatbread is our favorite version. We like using a pizza crust instead of a pre-made flatbread or naan bread, since it turns out lighter in texture. The BBQ chicken, onion and cilantro is a simple combination, but the flavors combine well. Roasting the chicken breast with our North Carolina BBQ Rub adds extra flavor.

We will serve our BBQ Chicken Flatbread with some oven roasted asparagus, or pan-roasted Brussels sprouts, even though it’s a meal in itself. Depends how hungry you and your dinner guests are.

Serves 3 to 4

Ingredients:
12 ounces Boneless Skinless Chicken Breast, (about 1 and a half)
Olive Oil
1 ½ Tablespoons North Carolina BBQ Rub
1 Pre-packaged Pizza Dough, like the ones in the refrigerated dinner roll section
¾ Cup BBQ Sauce of your choice
½ Cup Diced Red Onion
½ Cup Coarsely Chopped Fresh Cilantro

Directions:
Preheat oven to 400 degrees. Lightly coat the chicken breast(s) with olive oil. Sprinkle 1 tablespoon of the North Carolina BBQ Rub evenly all over the chicken. Place in a 9″x 9″ Baking dish. Roast uncovered for 15 minutes. Turn over and cook for another 10-15 minutes or until the internal temperature is 165 degrees at the thickest part. Remove from the oven. Let cool for a few minutes. (Keep the oven at 400 degrees.)

Lightly oil a standard baking sheet with olive oil. Stretch out the pizza dough to a 9″ x 12″ size. Let come to room temperature while you finish preparing the chicken.

Shred the cooked chicken in a bowl. Pour the juices from the baking dish bowl over the chicken. Sprinkle the remaining ½ tablespoon BBQ rub on the shredded chicken. Toss to combine. Mix in ¼ cup of the BBQ sauce. Toss again to coat the chicken. Set aside.

Bake the pizza dough for 10 minutes. Remove the oven. Evenly spread the remaining ½ cup of the BBQ Sauce on the dough. Evenly spread the chicken, diced onions and cilantro on the BBQ sauce, in that order. Bake for another 10 minutes. The crust should be golden brown. Watch so it doesn’t burn. Remove, cut into 8 pieces and enjoy.

We use an Air-Bake Insulated baking cookie sheet, since it keeps the dough from burning easily. If you use a regular baking or cookie sheet, watch close so the dough doesn’t burn while cooking.
