British Spiced Pecan Cookies

British Spiced Pecan Cookies are easy to make and quite delicious. The British Mixed Baking Spice gives them a light, spiced flavor. They are lightly sweet with the brown sugar, while the pecans and browned butter add a nice nutty flavor. They are waiting to be served with your favorite tea. We hope you enjoy them as much as we do.

Makes 36

Ingredients:
¼ Cup Butter
1 ½ Cups Flour
2 Teaspoons Sheffield’s British Mixed Baking Spice
½ Teaspoon Baking Soda
¾ Cup Packed Brown Sugar
2 Teaspoons Vanilla Extract
1 Large Egg White
¼ Cup Honey
⅓ Cup Reduced-fat Sour Cream
36 Pecan Halves, Unsalted

Directions:
Preheat your oven to 350ºF, setting your racks in the upper and lower thirds positions. Spray 2 large baking sheets with non-stick cooking spray. Set aside until needed.

Melt the butter in a small saucepan over medium heat. Cook about 3 to 4 minutes until the butter turns a medium brown color, stirring frequently. Remove from the heat and pour into a small bowl. Set aside to cool down to room temperature.

In a small mixing bowl, add the flour, British Mixed Spice, baking soda. Whisk to combine.

In a large mixing bowl, add the brown sugar, vanilla extract, egg white, and honey. Stir to combine well. Add the browned butter, stir. Then add the sour cream and stir again. Add the flour mixture, continuing to stir to combine well.

Drop the dough in teaspoon-sized portions onto the baking sheets, about 2″ apart. Make sure you drop 36 portions on the sheets, so the cooking time and temperature and time don’t need adjustment. Press a pecan half into each portion a bit. Bake for 5 minutes, rotate the baking sheets and bake for another 5 minutes. Check to see if done. The cookies will be lightly crispy around the edges and will spring back when lightly pressed. If not, bake another minute or two. Remove from the oven and let cool a couple minutes. Transfer to a baking rack to cool completely. Enjoy!
