Brown Rice with Cilantro and Lime

Brown rice with it’s nutritional value and nutty flavor is finding its way into many recipes on many levels. Just substituting Brown Rice for White can change the flavor of the dish.
Rice recipes don’t need to be complicated to be flavorful. The Cilantro and Lime in this recipe adds just enough flavor to make it a perfect side dish for a Mexican, Southwest or even South American dinner.
Makes 4 Servings
2 Cups Cooked Brown Rice
2 Tablespoons Olive Oil
1 Clove Garlic, Minced
1 Teaspoon Ginger, Minced
1½ Teaspoons Dried Cilantro
3 Tablespoons Lime Juice
Sea Salt and Pepper to Taste
Zest of 1 Lime
Cook rice according to package directions. Set aside when done.
In a pan, heat oil and add garlic, ginger and cilantro. Cook until garlic starts to golden, then remove from heat. Add rice, lime juice, salt and pepper to the pan and stir well to combine. Top with lime zest.
