Garlic Tomato Basil Soup
Garlic Tomato Basil Soup is a twist on a classic tomato basil soup, by adding a bit more garlic than many recipes and some red pepper flakes for a bit of spiciness. Not hot, but just enough to let you know it’s there. This recipe is easy and while 30 Roma tomatoes seem like a lot, remember, they are a small tomato and they cook down to a beautiful puree.

6 Garlic Cloves Minced
2 Red Onions Minced
30 Roma Tomatoes Quartered
2 Cans Fat Free Chicken Broth
1 ½ Teaspoon Balsamic Vinegar
5 Tablespoon Dried Basil
1 ½ Teaspoon Red Pepper Flakes
4 Teaspoon Sea Salt
1 ½ Teaspoon Freshly Ground Black Pepper
3 Tablespoon Olive Oil
Saute onions and garlic in olive oil for 15 to 20 minutes. Add the tomatoes and cook for another 20 to 25 minutes.
Add chicken broth, balsamic vinegar, basil, red pepper flakes, salt and pepper. Stir over low heat and cook for 15 minutes.
Using a hand blender, blend all ingredients together. Once blended, cook for another 10 minutes.
Add more salt for flavor if needed.
