Greek Beef Kabobs

Our Greek Beef Kabobs are an easy, healthy dish. Grilled beef is always a great entrée, especially if you are on a low-carb diet. This can be paired up with rice pilaf, salad, sautéed or grilled vegetables or even a side dish of fruit, making for a balanced meal. The Mediterranean Seasoning marinade provides a classic Greek flavor.

Servings: 4-6

2 pounds boneless beef (tenderloin works the best)
1 cup plain whole milk Greek yogurt
2 tablespoons olive oil
2 to 4 Tablespoons Mediterranean Seasoning
Zest of one lemon
2 tablespoons freshly squeezed lemon juice
5 garlic cloves, minced
1 large red onion, cut into wedges
Vegetable oil, for greasing the grill

In a medium bowl, combine the Mediterranean Seasoning, garlic, yogurt, olive oil, lemon zest, and lemon juice.

Skewer the beef onto 6-8 metal skewers, alternating with the red onions. (If you use bamboo skewers, make sure they have been well-soaked in water.) Do not make the beef and onion too tight on the skewers. Place the kabobs on a baking sheet lined with aluminum foil. Brush the marinade on the beef coating it well. Cover and refrigerate at least six to eight hours or overnight.

Preheat the grill to medium-high heat. Brush the oil on the grill grates, using tongs and a paper towel dipped in the oil. Grill the kebabs 10 to 15 minutes, until cooked through, turning skewers occasionally. Transfer the skewers to a platter and serve.

Serve with a side of Rice Pilaf, Greek Salad or other Mediterranean side dish of your choice. You can also serve with Pita Bread as a sandwich, topped with onion, diced cucumber, tomato and tzatziki sauce.
