Maple Butter Walnut Puddings

Maple Butter Walnut Puddings are very delicious, and easy to make. We love anything maple, and the butter whisked into the mixture gives them what we describe as a maple-butterscotch flavor. The nutty flavor the walnuts add is a plus. Maple and walnuts go so well together. The Pure Maple Sugar we sell is pure maple syrup, just dehydrated and powdered, so what you get is pure maple flavor. The result is a dessert that satisfies our maple craving…sort of. We hope you enjoy them as much as we do.

Serves 4

Ingredients:
3 Large Egg Yolks
¼ Teaspoon Sea Salt
3 Tablespoons Cornstarch
2 Cups Whole Milk
1 Cup Pure Maple Syrup
2 Tablespoons Butter
1 Cup Walnut Pieces
4 Teaspoons Pure Maple Sugar
Walnut Maple Sauce, optional topping

Directions:
In a medium mixing bowl, add the egg yolks, salt and cornstarch. Whisk until smooth. Add the milk and whisk until combined. Add the maple syrup and whisk again until well combined and smooth. Pour the mixture into a medium saucepan. Heat over medium heat, whisking constantly until it comes to a boil. Continue to whisk for a minute then remove from the heat. Add the butter and whisk until melted and smooth.

Ladle equally into 4 8-10oz ramekins or other appropriate dessert bowl. Clear bowls look good. Cover with plastic wrap, with the wrap touching the pudding surface to prevent a skin from forming. Refrigerate for 3 to 4 hours so they completely cool and set properly.

While the puddings are cooling, toast the walnuts for the topping. Add the walnut pieces to a medium non-stick skillet. Toast over medium heat for about 5 minutes until they are fragrant and start to turn golden brown. Stir frequently or they will burn. Remove from the heat and let cool down until needed.

To serve, top each bowl with the toasted walnut pieces. Sprinkle a teaspoon of the Pure Maple Sugar over the walnuts. Enjoy!

For extra maple flavor, after the walnuts pieces are toasted, toss them in a small mixing bowl with another ¼ cup of maple syrup.
