Juniper Berries have a history in this country dating back to Native Americans from the Northwest region who used the crushed berries to flavor wild buffalo. Most people though, know Juniper is the flavoring when making gin. The aroma of Juniper is bittersweet while the taste is clean, a bit sweet and it also provides a slight burning sensation. Easily crushed with a mortar we recommend that you wait to crush until just before using as this releases their essential oils and enhances their flavor.
In the U.S. the Juniper berry is frequently found in marinades, brines, stuffing and sauces. Use with apples, beef, duck, goose, pork, corned beef and sauerbraten. They are also used when cooking many game meats like venison, buffalo and wild boar.
The berries are used in German, Scandinavian and other European cooking. They are used in marinades for pickled meats and game. In Germany as a flavoring for sauerkraut and other traditional dishes.
