Taco Pinwheels

Taco Pinwheels are fun to make and delicious to eat as an appetizer at a party or other Southwest-themed dinner. Your guests get to top their own pinwheels with a variety of toppings you provide. The assortment is only limited by your imagination. They are also an alternative to making regular tacos, or using your leftover taco meat.

Ingredients:
½ lb ground beef (80/20 or 85/15)
1 Can Refrigerated Pizza Dough. We’ve used both standard and thin crust.
2 Tablespoons Sheffield’s Taco Seasoning
4 Oz. Water
1 Cup Fine Shredded Mexican Blend Cheese
Fresh Salsa, Sour Cream, Sliced Black Olives, Cherry Tomato Slices, Jalapeño Slices, Shredded Lettuce, Guacamole, or other toppings of your choice.

Directions:
Preheat oven to 400°F if you are using standard pizza crust, or 425°F if you are using thin crust. Line a rimmed baking tray with foil and spray lightly with cooking spray.

In a medium skillet, cook the ground beef on medium high until browned. Drain off any excess grease. Add the taco seasoning and water. Stir until well combined. Turn down to simmer. Cover and simmer for 10-15 minutes, stirring occasionally or until the mixture starts to thicken up. Turn the heat off and keep covered.

Take the pizza dough from the package. Unroll it on a flat surface like a large cutting board. Press it out into it’s rectangular shape.

Spoon the taco meat onto the pizza dough. Spread evenly to within about ½” of the edges. Sprinkle the shredded cheese evenly on the taco meat.

Starting with the long edge of the dough, roll the dough up tightly along the entire length of the dough into one long roll. Using a serrated knife, cut into 1 inch slices, wiping the knife blade with a wet paper towel between cuts so the blade won’t stick. Cutting with light, sawing strokes works best. You’ll have about 18 slices. Set the slices on their sides on the baking sheet.

If you are using the thin pizza crust dough, once rolled up, put on a long plate and place in your freezer for 10 minutes to firm up the crust, making it easier to cut.

Bake for 12 to 14 minutes, or until lightly golden brown around the edges. Bake another minute or 2 if needed.

Serve immediately and let your guests top with their favorite toppings. Enjoy.
