
Chicken Chickpea Soup
Chicken Chickpea Soup is one of the easiest soup recipes we’ve made. Our Garlic Rapture and other seasonings give the chicken and vegetables a very savory flavor. Adding the chickpeas near the end of the cooking keeps them firm and add a nice texture to the soup. It makes a delicious vegetarian/vegan recipe by leaving out the chicken and using vegetable broth.
The soup itself is a complete meal, but we like to serve it with a small mixed green salad and our Italian Dressing. We’ll also add a slice or two of a nice crusty bread. Try our Easy Crusty Bread Recipe if you want to make it all at home. Enjoy!
Serves 4 to 6
Ingredients:
3 Quarts Chicken Broth, Plus Extra if Needed
2 Tablespoons Olive Oil
1 Large Onion, Minced
3 Celery Stalks Chopped
3 Tablespoons Sheffield’s Garlic Rapture, Divided
2 Cups Roasted Chicken, Diced. We use the breast meat from a store roasted chicken.
1 Teaspoon Hungarian Paprika
1 Teaspoon Chile Powder. We use New Mexico Medium Red Chile Powder
3 Teaspoons Dried Greek Oregano
1 Bay Leaf
2 Tablespoons Lemon Juice
2 15.5 Ounce Cans of Chickpeas
Directions:
Pour the chicken broth into a large stock pot, over high heat.
While the broth is coming to a boil, heat the olive oil in a large skillet over medium heat. When it starts to shimmer, add the onion, celery, and 1 tablespoon of the Garlic Rapture. Cook for about 5 minutes or until the onion and celery starts to get fork tender.
When the chicken broth comes to a boil, transfer the vegetable mixture to the pot. Add the diced chicken, remaining 2 tablespoons of Garlic Rapture, paprika, chile powder, oregano, and bay leaf. Reduce heat to a simmer, cover and cook for an hour.
Add the lemon juice and chickpeas. Stir to combine and cook for another 10 minutes until the chickpeas are heated thoroughly. Add extra broth if needed to achieve a good soup consistency.
You can serve by itself, or with a small side salad to round out your meal. You can also serve with a slice or two of a crusty bread. Our Easy Crusty Bread Recipe on our website is the one we use.
