Cajun Shrimp Scampi
Our Cajun Shrimp Scampi is a twist on traditional shrimp scampi. Cajun Seasoning adds a nice spicy flavor to the shrimp. Our version is also simpler to prepare than most, making it a great dish to make when you don’t have a lot of time but want to impress your family and guests.
We serve our Cajun Scampi over linguine, which we’ve tossed with a bit of butter and more of our Cajun Seasoning. This adds an extra layer of flavor, which is outstanding. This is a complete meal, but we also like to serve it with a small side salad and a seasonal green vegetable. Enjoy.
Serves 4
Ingredients:
12 Ounces Uncooked Linguine
1 Pound Medium Shrimp, Peeled and Deveined. We use the 31-40 to a pound size.
5 Tablespoons Butter, Divided
3 Tablespoons Sheffield’s Cajun Seasoning, Divided
2 Cloves Garlic, Minced
½ Teaspoon Sea Salt
¼ Cup Chopped Fresh Parsley for Garnish
Directions:
Prepare linguine according to package instructions. Remove from the heat when done, and set aside. While the pasta is cooking, prepare the shrimp.
Heat 3 tablespoons of the butter in a large non-stick skillet over medium heat. Once melted, add the minced garlic. Stir once then add the shrimp. Sprinkle the salt and 1 tablespoon of the Cajun Seasoning on the shrimp. Sauté for 2 minutes. Turn over, sprinkle with another tablespoon of the Cajun Seasoning, and sauté another 2 minutes. The shrimp should be thoroughly cooked and opaque. Don’t overcook or they will be tough. Remove from the heat.
Drain the pasta. Add 2 tablespoons of the butter and stir to melt. Sprinkle in the remaining tablespoon of the Cajun Seasoning. Toss again to coat the pasta.
Serve the shrimp over the linguine, and garnish with the parsley. Enjoy!
