Mini Taco Scoops

These Mini Taco Scoops are a perfect party appetizer, or if you’re really hungry, an alternative to nachos. Our Taco Seasoning gives these little treats a big taco flavor in a bite-size portion. Think about where these would make a great appetizer. A sporting event on the big screen. A Southwest-themed party. A Christmas or New Years party. The possibilities are endless. What’s also great about these Mini Taco Scoops is that you can make the basic scoop, then have your guests top them their way with salsa, olives, jalapenos, sour cream and other toppings.

Serves 4 or More

Ingredients:
A Large Bag of Tortilla Scoops Chips
1 Pound 85/15 or 80/20 Ground Beef, Cooked and Drained
¼ Cup Sheffield’s Taco Seasoning
¾ Cup Water
1 15oz. Can Refried Beans, Heated
1 to 2 Cups Shredded Cheddar or Mexican Blend Cheese, depending how you like your cheese layer.
Salsa, Sour Cream, Sliced Black Olives, Jalapeno Slices, Green Onions, Fresh Cilantro or other topping of your choice.

Directions:
Preheat oven to 350ºF. Set rack in middle of the oven.

Cook and drain the ground beef. Add the taco seasoning and water. Reduce heat and simmer until water is mostly absorbed. Add a bit more water if too dry. Remove from heat.

Set scoops on a large, foiled lined cookie sheet. Spoon about a teaspoon of the heated beans into each chip. Spoon a generous teaspoon of taco meat on top of the beans, then top with cheese. Bake at 350 degrees for about 7 to 10 minutes or until cheese is completely melted. Remove from the oven. Top with Salsa, Sour Cream, Black Olives, Green Onions, or any of the other toppings of your choice. Enjoy!
