Mini Taco Scoops
Everyone is looking for easy, tasty appetizers, and these Mini Taco Scoops are just that. Perfect for parties, family celebrations, sporting event gatherings around the TV, or anytime you need a quick dish or one to take to a party. For toppings, use your imagination. How do you top your tacos or burritos? Use the same toppings. By having a selection of them, everyone can customize their own minis.
A Large Bag of Tortilla Scoop Chips
1 to 1 ½ Pounds 85/15 or 80/20 Ground Beef, Cooked and Drained
¼ Cup Taco Seasoning
¾ to 1 Cup Water
1 Cup Refried Beans
1 Cup Shredded Cheddar or Mexican Blend Cheese
Toppings – Salsa, Sour Cream, Green Onions, Jalapeno Slices, Fresh Cilantro or other topping of your choice.
Cook and drain ground beef. Add taco seasoning and water. Reduce heat and simmer until water is mostly absorbed. Remove from heat.
Set Scoops on a large cookie sheet. Spread a small amount of beans into chip with a tea spoon.
Add a spoonful of taco meat. Top with cheese. Bake at 350 degrees for about 10 minutes or until cheese is completely melted. Top with Salsa, Sour Cream, Green Onions, or other toppings.
