Birria Seasoning

Birria is a traditional slow-cooked dish from the Jalisco state in Western Mexico. Similar to slow-cooked barbacoa, birria is usually made into a stew, topped with onions and cilantro and served with tortillas or bread. The seasonings used in Birria include several types of chile peppers, cumin, garlic, onion, bay leaf, and in many versions a touch of cinnamon, and clove, as well as a bit of salt and pepper to tie all the flavors together. The spices and herbs are braised with the meat for several hours until it is fork tender and shreddable. The stew is most flavorful.

Birria is also served on bread or on tortillas as Birria Tacos, which are stuffed with cheese and finished in a pan for a minute until crispy, then topped with onion, cilantro and other toppings.
