Espresso Rub

Our Espresso Rub has a wonderfully complex flavor. It has both a savory and slightly sweet flavor from the dark coffee, chile powder, other spices and brown sugar we use. The result gives your steak, roast, chicken, salmon or whatever you use it on, a rich flavor which can get you hooked.

Nobody can seem to determine when coffee started to be used in cooking, since its history as a cultivation crop goes back into the 1300’s and 1400’s in the Arabic countries before making it’s way into Europe. In America, coffee shows up as a cooking “spice” as far back as the Pioneer Days when it was used as a marinade by the trail cook. They also used the coffee grounds as a meat rub. Over time, other spices, chile powder, usually Ancho, were added to the ground coffee and the rest really is history.

Espresso Rub is found in many fine restaurants on steaks, chicken and more, where the cuts are usually grilled or roasted over high heat to start, which creates a flavorful crust. They are then finished over a lower heat to your preferred doneness.

As with all rubs, we recommend using about 1 Tablespoon per pound, rubbing it in well on all sides. Cover and refrigerate for 1-2 hours before cooking allows the flavors to develop.
