Fennel Seed

Fennel Seed is from the fennel plant which is used extensively in Mediterranean and European cuisines. Fennel Seed and Fennel Powder are popular in these same regions. You can also use the leaves in recipes. You can also grind the dried seed.

The French use Fennel Seed in vinaigrettes, soups, as well as in their classic Herbs de Provence herb blend. We use it in our version, since it wouldn’t be the same without it. They also use it in seafood dishes, like mussels, salmon and other fish recipes.

Italians use fennel in many dishes we all know, like tomato and pasta sauces, meatballs, various sausages and pizza topping. They also use the seed in many pork dishes like roasts.

You also find fennel in North African and Middle Eastern cuisines. Moroccans use fennel seed in some of their tagine recipes, while Middle Eastern and Spanish cuisines use them in breads and other baked goods. It is also a key ingredient in Chinese Five Spice Powder.

Fennel works well with potatoes, sauerkraut, herb butters, pastries, cookies, egg dishes and spiced fruits. These are only a few cooking ideas. Fennel is used throughout the world and you are sure to find many more ways to use it.

Grinding Fennel Seed with a mortar and pestle prior to use helps release the flavor. Many recipes recommend heating or toasting them slightly in a pan to further enhance the flavor before adding them to the dish.
