Savory Chicken

Savory Chicken is an easy dish to make. Our Savory Onion Blend gives both the chicken and the sauce such a….savory flavor, you’ll wish you made a double batch or will have to make it again real soon. The sauce has such a great flavor, if you serve the chicken with a side of pan-roasted new potatoes, you’ll want to make a bit more sauce so you can drizzle some on them. Wild rice or rice pilaf makes an excellent pairing as well. Add a seasonal green vegetable like broccoli or fresh green beans and you have a meal your guests will ask for over and over.

Serves 4

Ingredients:
4 Medium or 2 Large Boneless, Skinless Chicken Breasts. Pound to about ½” thick. If using 2 large chicken breasts, cut horizontally into 2 cutlets, then pound flatter.
4 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Sheffield’s Savory Onion Blend
1 Cup Chicken Broth
3 Tablespoons Butter
1 Tablespoon Garlic, Minced
2 Teaspoons Fresh Chopped Parsley for Garnish

Directions:
Evenly sprinkle the Savory Onion Blend on both sides of the chicken breasts. Add the 4 tablespoons of the olive oil to a large skillet. Heat over medium-high heat until it starts to shimmer. Carefully add the chicken pieces. Cook for 5 minutes, then turn over and cook another 5 minutes until cooked thoroughly. They should be nicely browned on both sides, but not burned. Transfer to a plate and loosely cover with foil to keep warm.

Keep the skillet on medium-high heat and slowly add the chicken broth to the skillet. Deglaze the pan and scrape up any brown bits with your spatula. Add the 3 tablespoons of the butter and stir into the broth until it melts completely. Add the tablespoon of minced garlic. Stir in to combine. Reduce heat to medium and simmer for about 5 minutes, allowing the broth to reduce to sauce thickness. You can add a bit more broth if it reduces too much.

Reduce the heat to low, and add the chicken pieces back to the skillet. Spoon the sauce over the chicken. Reheat the chicken for a minute in the sauce. Serve immediately and garnish with the chopped parsley.
