
Chicken Schnitzel
Chicken Schnitzel is a classic German dish. It is similar to an Italian chicken cutlet, just seasoned differently and without any sauce topping. Our Poultry Plus Seasoning adds a wonderful, savory flavor to the chicken. Using Panko breadcrumbs for the breading gives them a crisper texture than regular breadcrumbs. The result is a light, crispy, flavorful chicken cutlet. Serve with a side of wild rice, or our traditional German Spaetzle, along with a seasonal green vegetable, like Brussels sprouts, asparagus or broccoli. Enjoy!

Ingredients:
2 Medium Boneless, Skinless Chicken Breasts
3 Tablespoons Sheffield’s Poultry Plus Seasoning
½ Cup Flour
2 Large Eggs
2 Teaspoons Dijon Mustard
1 ¼ Cups Panko Bread Crumbs
½ Cup Olive Oil or Canola Oil for Frying
Sea Salt for Finishing
Directions:
Slice each chicken breast horizontally into 2 cutlets. Pound them flat to about ¼” thick. Season each cutlet evenly on both sides with our Sheffield’s Poultry Plus Seasoning. Rub in a bit so the seasoning sticks better.
In a medium bowl, beat the eggs well with the Dijon mustard.
Add the flour and the Panko bread crumbs to 2 additional separate shallow plates.
Coat the chicken cutlets on both sides with the flour, shaking off any extra. Dip them in the egg mixture, then coat them with the Panko breads crumbs on both sides. Set them aside until needed.
In a large, non-stick skillet, heat the oil over medium-high heat. When the oil starts to shimmer, carefully place the breaded cutlets in the skillet. Cook for 4 to 5 minutes until golden brown, then turn over and cook the second side for 4 to 5 minutes until golden brown. Check each side at 4 minutes. The cutlets should be thoroughly cooked and at least 165ºF. Watch carefully so they don’t burn or overcook.
Transfer the cooked cutlets to a plate lined with paper towel to absorb any excess oil. Finish with a sprinkle of Sea Salt to taste. Adds a great touch.
Serve immediately with a side of wild rice, roasted potatoes, and a seasonal green vegetable. For a traditional German side, try our Spaetzle.
