
Grilled Tuscan Parmesan Zucchini
Grilled Tuscan Parmesan Zucchini is a wonderful Summer vegetable dish. It keeps the heat out of your kitchen, and gives you a side dish which can be served along side most entrees, whether grilled or not. Our Tuscan Seasoning has just the right combination of spices and herbs, with a touch of spicy crushed red pepper, to compliment the zucchini and Parmesan cheese.
This recipe can also be adapted to grill other vegetables, like tomato halves, Summer squash, and asparagus, or others of your choice. All you need to do is adjust the cooking time, just watching so your veggies don’t overcook.

Ingredients:
4 Medium Zucchini, Quartered Lengthwise
2 Tablespoons Sheffield’s Tuscan Seasoning
½ Cup Parmesan Cheese, Freshly Grated Fine
2 Tablespoons Olive Oil
2 Tablespoon Fresh Parsley Leaves, Chopped for garnish (optional)
Directions:
Place a sheet of heavy-duty foil over the middle cooking area of your grill. Give the foil a light spray of non-stick cooking spray. Then, set up your grill to cook indirect with medium heat at 350ºF.
In a small mixing bowl, add the Tuscan Seasoning and Parmesan cheese. Toss to combine,
Place zucchini pieces on a low rimmed baking sheet. Drizzle the olive oil evenly over the pieces, then sprinkle with the Tuscan Parmesan mixture.
Transfer the zucchini pieces onto the foil in the pre-heated grill. Close the lid and cook about 15 minutes, or until fork tender and golden brown. Check after 10 minutes. Don’t overcook or burn. They should be a bit crunchy when bit.
Garnish with optional parsley if you like, then serve immediately. Enjoy!
