Ok, here’s one more of our Japanese Green Teas, I must run by you. Since I’m still in my plain tea mind set, our Gyokuro Japanese Green Tea is what’s in my cup today. If you’ve never sipped it, it’s very grassy in flavor, and what Matcha is made from.

Gyokuro is as traditional as one can get when speaking of Japanese tea. Gyokuro’s origins can be traced back to the 1500’s. Most Japanese green teas are steamed during processing. But the gyokuro cultivar is shaded for the last 3 to 4 weeks prior to harvesting, in order to drive more of the “good stuff” we find in tea, including chlorophyll giving it the dark green color, into the leaves. So it justifiably earns it’s English translation….Jade Dew. Some of the “good stuff” include flavonoids and polyphenols, both of which are antioxidants.

It’s Gyokuro which when slow ground becomes Matcha. A quality Japanese green tea can also have the cloudiness you see in my picture. Finer Japanese teas are rolled into tight needles, which can also break off and settle to the bottom of the cup. Drink it all down to get all the benefits. It’s just tea.
