Lemon Basil Pasta Salad

Our Lemon Basil Pasta Salad is a refreshing pasta salad for any time of the year, but especially during the hotter, Summer months when a cold salad is delicious to accompany your burgers, grilled chicken, ribs or just about any Summer meal. Our Lemon Basil Salad Dressing compliments the vegetables and feta cheese with a fresh, lemony and basil flavor.

Add a couple cups of roasted, diced chicken breast to make an entrée salad. You can add other veggies of your choice. Any way you serve it, it’s sure to be a hit with your guests. Enjoy!

Serves 4 to 6

Salad Ingredients:
12 Ounces Farfalle or Rotini Pasta
2 Cups Persian or English Cucumbers, Diced
½ Cup Celery, Diced
1 Cup Green Bell Pepper, Diced
½ Cup Red Onion, Diced
1 Pint Cherry Tomatoes, Cut in Half
¼ Cup Flat Italian Parsley, Chopped
½ Cup Feta Cheese, Diced or Crumbled

Dressing:
1 Ounce (about 4 tablespoons) Lemon Basil Salad Dressing Mix
3 Tablespoons Water
⅔ Cup Avocado or Canola Oil
In a medium mixing bowl, add the Lemon Basil Salad Dressing Mix, and the 3 tablespoons water. Whisk to combine. Let set for 5 minutes to let the herbs and spices mingle. Add the ⅔ Cup Avocado or Canola Oil. Whisk well to combine. Set aside for 10 minutes to let the flavors develop

Directions:
Cook the pasta al dente according to the package instructions. Rinse in cold water, then set aside until needed.

Prepare dressing. While the dressing is set aside, finish cutting up the vegetables.

In a large mixing bowl, add the cut up vegetables, feta cheese, and cooked pasta. Gently toss. Whisk the dressing one more time, and pour over the vegetables and pasta. Gently toss again. Cover and refrigerate for at least 30 minutes to chill down. Stir again before serving. Enjoy!
