Green Cardamom Pods
Green Cardamom Pods are native to India. They have a fresh pungent, aromatic flavor. Whole pods are used in savory recipes in India, Southeast Asia and the Middle East. They are also used to flavor teas, like Masala Chai, as well as coffee. Cardamom is used in its ground form in both Middle Eastern and Scandinavian baked goods. Cardamom loses flavor quickly once ground, so chefs will buy the pods and grind them when needed for a recipe.
With cardamom’s complex, slightly sweet, floral, and spicy with citrus undertones, it is a key ingredient in many spice blends especially Indian Curries and North African blends.
Cardamom is used for savory flavoring in pâtés, purées, rice, sauces, soups and stews. It also enhances recipes with chicken, meats, seafood and vegetables. Add some crushed or ground to enhance custards, ice cream and rice pudding. Sprinkle them over a fresh fruit salad.
Chewing on Cardamom Pods can calm an upset stomach while sweetening the breath.
