Savory Herb Baked Cod

Savory Herb Baked Cod is always a favorite with our guests. Our Savory Herbs Blend gives these fillets a nice herbed flavor. Baking them keeps them moist and flaky. You can use haddock, halibut or other white fish if cod isn’t available since it’s the seasoning which imparts and wonderful savory flavor.

The flavor allows you to pair them with a number of side dishes. Wild rice always goes well with baked cod, as well a roasted or steamed seasonal vegetable, like Brussels sprouts, asparagus, or broccoli. We just see what our produce market has that day and looks good.

Makes 4 servings

Ingredients:
3 Tablespoons Sheffield’s Savory Herbs
2 Whole Fresh Cod Fillets (About 12-16 Ounces Each) or 4 Cod Fillet Portions (About 6 to 8 Ounces Each)
3 Tablespoons Fresh Lemon Juice
2 Teaspoons Freshly Ground Black Pepper
Sea Salt to Taste
3 Tablespoons Melted Butter

Directions:
Preheat Heat oven to 375° F

Rinse the cod fillets, and pat dry. Lightly spray a glass baking dish with non-stick cooking spray. Transfer the fillets to the baking dish. Drizzle evenly with the lemon juice. Sprinkle the fillets with the freshly ground black pepper. Lightly season with the salt to taste. Evenly divide the Savory Herbs on the fillets and gently rub to help the flavors mingle.

Cover the baking dish with foil. Bake for 10 minutes. Remove the dish from the oven. Remove the foil and evenly drizzle the melted butter over the fillets. Place the uncovered dish back in the oven for another 6-8 minutes until the fish is thoroughly cooked and opaque. The time will vary depending on the thickness of the fillets.

Remove from the oven and serve immediately, with a side dish or two of your choice. We like to serve with a rice dish and a seasonal vegetable.
