Summer Savory Bruschetta

Bruschetta is a favorite appetizer, whether for an Italian dinner, or as a Tapas item. There are many versions with many of the same herbs, but this Summer Savory Bruschetta has Summer Savory and Thyme, which add a fresh herby flavor. We love the flavor of Summer Savory with the other spices and herbs. The Savory brings out the flavor of the tomatoes.

¼ Cup Olive Oil
2 Tablespoons Dried Summer Savory
1 Tablespoon Dried Thyme
2 Tablespoons Dried Basil
¼ Teaspoon Garlic Powder
1 Clove Garlic, Minced
1 Teaspoon Sea Salt or to Taste
½ Teaspoon Freshly Ground Black Pepper or to Taste
4-5 Medium Roma Tomatoes, Diced with seeds removed
Extra Olive Oil (optional)

Mix ¼ cup olive oil with Summer Savory, Dried Thyme, Dried Basil, Garlic Powder, Minced Garlic, Salt, and Black Pepper in a large bowl. Whisk well to blend. Gently stir the tomatoes into the oil mixture. Add up to an extra ¼ cup of olive oil if you prefer a wetter Bruschetta. Cover and let the Bruschetta sit for 1 hour to allow the flavors to develop before serving.

Serve with toasted French Baguette slices.
