Taco Soup

Taco Soup

Taco Soup is so easy to make and so delicious to eat. Our Taco Seasoning adds a great flavor to the soup. We crafted the seasoning without sugar so all you taste are the spices and herbs. The flavor of the beans, corn, and other ingredients compliment each other so well. The seasoning ties them all together. Your guests will like personalizing the Taco Soup their way with the variety of toppings. We like to serve Corn Muffins on the side. We hope you enjoy it as much as we do.

Serves 4 to 6

Ingredients:
1 Pound Ground Beef. We used 85/15.  You can use ground turkey or protein crumbles if you prefer.
2 Tablespoons Canola Oil
1 Medium or ½ Large Onion, Diced
1 Green Bell Pepper, Diced
1 6 oz. Can Tomato Paste
3 Tablespoons Sheffield’s Taco Seasoning, Divided
1 15 ounce Can Kidney Beans Drained and Rinsed
1 15 ounce Can Black Beans Drained and Rinsed
1 15 ounce Can Corn Drained and Rinsed
1 15 ounce Can Diced Tomatoes
1 4 ounce Can Diced Green Chilies, or 1 Medium Anaheim Green Chile Pepper, Diced
3 Cups Water

Suggested Toppings:
Monterey Jack, Oaxaca, Cotija, Cheddar, Mozzarella, or other cheese of your choice.
Diced Fresh Jalapeno Peppers
Chopped Cilantro
Diced Avocado
Sliced Radishes
Sour Cream

Directions:
In a large non-stick skillet, brown the ground beef over medium high heat, breaking it up into small crumbles. Stir frequently so it doesn’t burn. Transfer to a large stock pot. Remove the excess fat from the skillet.

Add the canola oil to the skillet. Add the onion, bell pepper, and 1 tablespoon of the Taco Seasoning. Stir frequently for 3 to 4 minutes, or until the onion starts to get translucent and golden brown around the edges. Transfer to the stock pot.

To the stock pot, add the tomato paste, and remaining 2 tablespoons of the Taco Seasoning. Stir again to combine. Add the water, beans, corn, green chiles, and diced tomatoes. Stir once more. Cover, bring to a simmer. Cook for 20 minutes. Stir a couple times while cooking. Our recipe is low-sodium, so adjust salt to taste.

To serve, ladle Taco Soup into bowls. Let your guests garnish their soup with the optional toppings. We like to serve it with corn muffins. Enjoy!
