Blended with other spices, they are used to make Pickling Spice and Corned Beef Spice which can then be used to make pickles, brines and marinades.
They are used in Germany to make the stone ground mustards we associate with German recipes. The brown seed is also the one used to make Dijon mustard, since it has more bite than the yellow.
