New Mexico Red Chile Rub

We crafted our New Mexico Red Chile Rub to be used with a variety of meats, seafood, vegetables and more. Use as a rub, or just sprinkle on your dish before cooking. We use Hatch New Mexico Red Chile Pepper for the base spice. We then add some brown sugar to compliment the spiciness of the chile pepper, some garlic and other spices to round out the flavor.

The taste of a New Mexico, especially from Hatch, is different than other chile peppers. The spiciness level can be from mild to quite hot. They also don’t have the bitterness other chiles have. This is why we use the New Mexico chile pepper in our blend so the overall flavor of all the spices comes through, ane not just the pepper.
