Italian Cheesy Chicken

Italian Cheesy Chicken is an easy dish to make. Our Italian Seasoning added to the bread crumbs and Parmesan cheese enhances the Italian flavor. And our Sheffield’s Essential Seasoning gives the chicken an extra savory flavor. The cheese sprinkled on top while baking adds a cheesy flavor to complete the dish.

You can finish your plating with a seasonable green vegetable, or if you want to go Italian traditional, serve the chicken with a side salad drizzled with Italian dressing and a swirl of pasta, tossed with a bit of butter and a sprinkle of Italian Seasoning, or our Tuscan Seasoning. We serve our Italian entrees both ways, depending on our mood. Please enjoy!

Serves 4

Ingredients:
2 Large Boneless, Skinless Chicken Breasts
1 Cup Italian Seasoned Bread Crumbs
2 Teaspoon Dried Italian Seasoning
1 Tablespoon Sheffield’s Essential Seasoning
½ Cup Freshly Grated Parmesan Cheese
1 ½ Cup Shredded Mozzarella Cheese
2 Large Eggs
¼ Cup Milk
½ Cup All-purpose Flour
2 Tablespoons Olive Oil, or Avocado Oil, plus extra if needed.

Instructions:
Preheat the oven to 375°F. Lightly coat a 9×13 baking dish with non-stick cooking spray.

Cut Chicken breasts in half. Pound the thinner end about ½” thick. Slice the thicker half horizontally into 2 cutlets. Pound each one thinner to about ½” also.

In a shallow dish, combine the Italian Seasoned Bread Crumbs, Italian seasoning, and the ½ cup of Parmesan cheese.

In a second dish, add the flour. In a third dish, add the eggs and milk. Beat lightly to combine.

Sprinkle each chicken cutlet with about ½ teaspoon of Sheffield’s Essential Seasoning per side. Dip each chicken breast in the flour to coat. Shake off any excess.

Dip the floured chicken in the egg mixture. Coat each piece in the seasoned bread crumb mixture. Pressing the crumbs on lightly will help them stick better.

In a large skillet, heat the olive oil over medium-high heat. When it starts to shimmer, transfer the chicken breasts to the skillet. Cook for about 3 to 4 minutes on each side until golden brown. Transfer the browned chicken to the prepared baking dish.

Bake in the pre-heated oven for 10 minutes. Remove the dish from the oven. Sprinkle the mozzarella cheese evenly over the chicken breasts. Return dish to oven and bake another 5 minutes until the cheese is melted, and the internal temperature with an instant read thermometer is 165ºF.

Serve with a seasonal green vegetable and a side salad or a swirl of buttered & seasoned pasta. Enjoy!
