Avocado Oil is relatively new to the culinary world. Like olive oil, avocado oil is pressed from the pulp surrounding the pit. It is great for sautéing or frying as it has an unusually high smoke point. There are other cooking oils with higher flash points, but the most tend to have flavors which can be imparted in the dish being prepared, unless the ingredients have heavier flavors to override or compliment the flavor of the oil, like peanut oil as an example.
The light flavor also makes Avocado Oil very suitable for use in salad dressings, as it does not interfere with the flavors in the vinegars and herbs used in the dressing.
