I’ve not talked about our Kirkoswald Estate Dimbula Black Tea before, and I don’t know why. We like our Ceylon teas. They have clean flavors, not harsh but depending on the location and elevation, still have differing robust flavors.

Kirkoswald is an older estate in Sri Lanka, up in the higher elevations, around 4000-4500 feet above sea level. It has a bright flavor and a golden, coppery color, which reminds me of the teas I first drank growing up. The light floral characteristics make this a perfect afternoon tea when you want to be refreshed and maybe nibble on a digestive if you have one around.

I tell our friends that if you really want to understand what an individual tea tastes like, sip 2 teas at the same time, made at the same time, same water temp, steeping time and using the same amount if tea. If they are similar teas, like in this case, 2 Ceylon teas, you can compare and contrast them, picking up on the subtleties. It’s rather fun.
