Toffee Bit Cookies with Salted Caramel Topping

Toffee Bit Cookies with Salted Caramel Topping are really good, we must say. We grew up in a toffee and caramel world. We both had English grandparents who always had caramels and toffees sitting around, and because caramel candies, apples and other toffee delights were more common back then. And with the popularity of Salted Caramel, we use our Salted Caramel Sugar as a topping, which has sea salt blended in for the right flavor. We don’t tell you how much to use as a topping, since you might like a little more or less than we do.

These slightly chewy cookies with the toffee bits baked in, are just right on a Fall evening with your favorite cup of tea, when you crave a bit of sweetness of a caramely type. Enjoy!

Makes 36 Cookies

Ingredients:
¾ cup salted butter
¾ Cup Packed Light Brown Sugar
¾ Cup Granulated Sugar
½ Teaspoon Sea Salt
1 Teaspoon Baking Soda
2 Large Eggs
1 Teaspoon Vanilla Extract
2 ¾ Cups All-purpose Flour
2 Cups Toffee Bits, like Heath or similar.
Salted Caramel Sugar for Topping

Directions:
Preheat the oven to 375ºF. Line two large low rimmed baking sheets with parchment paper. Give them a light spray with cooking spray. Set aside until needed.

In a large mixing bowl, add the butter, brown sugar, granulated sugar, salt, and baking soda. Using a hand-held mixer, mix about 2 minutes or until well combined. If you use a stand mixer, use the paddle attachment.

Add the eggs and vanilla extract. Mix another 1 to 2 minutes until the batter is light and fluffy.

Add the flour and toffee bits. Continue to mix until everything is well combined and all the flour is wet.

Using a spoon, scoop the dough into 36 portions. Roll them into balls. Place them on the baking sheets about 2″ apart. Bake in the pre-heated 375ºF oven for about 10-12 minutes until the edges are starting to turn golden brown, but not burnt. They will still be a bit chewy. Remove from the oven.

Sprinkle the Salted Caramel Sugar on the tops right away, so it starts to melt in a bit.

Transfer to a wire rack to cool down, or until you can’t wait any longer and have to “sample” one to make sure they turned out OK. Enjoy!
