Lime Muffins

We love muffins and we love the flavor of fresh lime, so the lime muffins give us both flavors. By sprinkling the glazed tops with lime sugar, you get an extra dash of lime flavor. These muffins are easy to make and delicious to eat, so you might find yourself making a second batch soon after the first are gone. The refreshing lime flavor goes well with pretty much any tea. They are perfect for your tea party or in the morning when you’re sipping your favorite tea. Enjoy!

Makes 12 Muffins

Ingredients
Muffins:
2 ¾ Cups All-purpose Flour
2 Teaspoons Baking Powder
⅛ Teaspoon Sea Salt
½ Cup Dark Brown Sugar
1 Lime – Grate zest and set aside. Squeeze juice and also set aside.
4 Tablespoons Honey
2 Eggs
⅓ Cup Yogurt
½ Cup 2% or Whole Milk
⅔ Cup Canola Oil
12 Paper Muffin Liners

Glaze:
1 Cup Powdered Sugar
⅛ Teaspoon Vanilla Extract
2 Tablespoons Milk
2 Tablespoons Lime Sugar for sprinkling on top

Directions:
Preheat the oven to 390°F. Put the paper muffin liners in muffin tins.

In a large mixing bowl, add the flour, baking powder, lemon zest, salt, and brown sugar. Whisk well to combine.

In a second medium bowl, add the yogurt, eggs, honey, milk, and lime juice. Whisk to combine then add to the dry ingredients bowl. Fold together with spatula until well mixed.

Divide the batter evenly between the muffin cups. Transfer the muffin pans to the oven. Bake for 20 to 25 minutes until done, so a toothpick comes out clean and the tops are golden brown.

Remove the muffins from the pan. Set them on a wire rack to cool.

To make the glaze, add all the ingredients to a small mixing bowl. Whisk well to combine. Once the muffins have cooled, dip the muffins in the glaze and place back on the rack. Sprinkle the lime sugar evenly on top of the muffins.
