Brown Mustard Seed is grown and used in many countries and in many cuisines. Major producers of mustard seed includes India, Pakistan, Canada, Nepal, Hungary, Great Britain and the United States. References to mustard go back to the time of the Bible and to 5th century BC.

When used whole, the seed can be used as is, or lightly toasted first to release the oils and flavor.

In Indian and British cuisines, Mustard Seed is used to make pickles and chutneys. They are also used to make Indian curries.

Blended with other spices, they are used to make Pickling Spice and Corned Beef Spice which can then be used to make pickles, brines and marinades.

They are used in Germany to make the stone ground mustards we associate with German recipes. The brown seed is also the one used to make Dijon mustard, since it has more bite than the yellow.

You will find them used to flavor meats around the world.
