Colombo Powder, or Poudre de Colombo, is a curry spice blend found in the Caribbean islands. Named after the capital of Sri Lanka, Colombo cooking is a Sri Lankan type of cooking brought to the West Indies by plantation workers, traditionally made in a pot. Originally found in the French West Indies islands of Martinique and Guadeloupe, the rich, curry flavor has spread throughout the Caribbean, and easily substituted for any curry powder. Most “signature dishes” made with this spice blend are stew-type curry dishes, as they are most associated with this style of Sri Lankan cooking. They are usually made with pork, chicken or lamb, but you can find many vegetable dishes as well.
As with most curries, Colombo Powder blends are as varied as the families and villages which have made it for hundreds of years.
We hand-crafted our Colombo Powder to contain the spices and herbs most associated with traditional family blends. The result is a wonderful mix of flavors which can be used as you would with any curry recipe, whether you use chicken, pork, lamb, tofu or other proteins. It also makes a delicious addition to rice and vegetables. Try rubbing on your vegetables before roasting as well as on your roasted ears of corn. It is also Salt Free for those on a salt-restricted diet.
