Citrus Brining Mix Instructions
We crafted our Citrus Brining Mix to have a citrusy, savory flavor. Use about 1 oz of the citrus brine blend per pound of turkey or other protein. So, a 4 oz packet will brine a chicken or other smaller proteins. An 8 oz packet will brine a small turkey and most other meats. A 16 oz packet will brine an average 16-20 turkey. Adjust amount with weights.
This page are the instructions we have printed on the back of our Citrus Brining Mix. If you are using our Citrus Brining Herbs, which does not have the salt and sugar, the basic instructions are the same, except you have to add the salt and sugar according to your preferences. The complete instructions are on the back of the packet.
If you are not using a brining recipe, measure enough water to completely cover the turkey, chicken, pork, or other protein. Bring the water to a boil in a large pot. Add the spices and stir until the salt and sugar have dissolved. Remove from heat. Let cool to room temperature before pouring over the turkey or other protein in a non-reactive container or brining bag. You can add some ice to cool it faster.
Cover, refrigerate and let sit in the brining solution for about an hour per pound of protein. When the brining time is done, remove turkey or other protein from the solution. Discard the brining solution, throughly rinse and pat to dry. Refrigerate again until you are ready to cook, allowing the outside to dry completely.
