Greek Pasta Salad

Greek Pasta Salad is the perfect cold Summer salad for your picnic or other gathering. The vegetables, combined with the Greek Salad Dressing is very refreshing. The Greek dressing uses our Greek Salad Dressing Mix, plus a bit of honey and Dijon mustard, which adds a touch of sweetness and extra flavor. The variety of colors of the ingredients makes this a visually appealing salad.

If you want to make this salad into a entrée, just add a couple cups of cooked, roasted, diced chicken breast. Any way you serve it, it is sure to be a hit with your guests. Enjoy!

Serves 6 to 8

Salad Ingredients:
12 Ounces Farfalle or Rotini Pasta
2 Cups Persian or English Cucumbers, Sliced & Quartered
½ Cup Pitted & Halved Kalamata Olives
½ Cup Red Onion Diced
1 Pint Cherry Tomatoes, Cut in Half
1 Cup Green Bell Pepper Diced
¼ Cup Flat Italian Parsley, Chopped Fine
½ Cup Feta Cheese Crumbled

Dressing Ingredients:
3 Tablespoons Red Wine Vinegar
6 Tablespoons Olive Oil
1 ½ Tablespoons Lemon Juice
3 Teaspoons Sheffield’s Greek Salad Dressing Mix
1 ½ Tablespoons Dijon Mustard (We use Grey Poupon.)
1 ½ Tablespoons Honey

Directions:
Cook pasta al dente according to the package instructions. Rinse in cold water, then set aside until needed.

Prepare dressing. In a medium mixing bowl, add the red wine vinegar, olive oil, and lemon juice. Whisk well to combine. Add the Greek Salad Dressing Mix, Dijon mustard and honey. Whisk again to combine well. Set aside for at least 15 minutes so the flavors develop while you’re cutting up the vegetables.

In a large mixing bowl, add the cut up vegetables, feta cheese, and cooked pasta. Gently toss. Whisk the dressing one more time, and pour over the vegetables and pasta. Gently toss again. Cover and refrigerate for at least 30 minutes to chill down. Stir again before serving. Enjoy.
