New Mexico Red Chile Chicken Breasts
New Mexico Red Chile Chicken Breasts is a delicious way to add a Southwestern flair to a simple chicken recipe. The flavor of Red New Mexico Chile is entirely different than using Ancho or other chile powders. The earthy, sweet flavor of the Mild Hatch New Mexico Chile we bring in directly from the grower combines well with the other spices to make an excellent marinade. The grilled chicken will impress your dinner guests. They will probably ask for the recipe.
To make it a complete meal, you can serve it with traditional Mexican rice and black or pinto beans. You can also serve with your favorite rice recipe and a mixed green salad with an avocado dressing.
4 Boneless Skinless Chicken Breasts
2-4 Tablespoons New Mexico Mild Red Chile Powder
1 Teaspoon Minced Garlic
1 Tablespoons Minced Onion
1 Teaspoon Freshly Ground Black Pepper
2 Tablespoon Sea Salt
Juice of One Lime
½ Cup Olive Oil
Combine the chile powder, garlic, onion, black pepper, salt, lime juice and olive oil in a bowl. Mix well. Place chicken breasts in a marinating dish or glass casserole dish. Pour the marinade over the chicken. Cover, and refrigerate for 2-3 hours. Cook over a hot grill until done, or the internal temperature reaches 165 degrees. You can also bake at 350 degrees or until the internal temperature reaches 165 degrees.
Serve with your favorite rice side dish and flour or corn tortillas.
