New Mexico Red Chile Chicken Breasts

New Mexico Red Chile Chicken Breasts is a delicious way to add a Southwestern flair to a simple grilled chicken recipe. The flavor of Red New Mexico Chile has an earthy, sweet flavor. We buy all our New Mexico peppers directly from the grower in Hatch, New Mexico, so we know the family and their history. We combine the New Mexico Red Chile with other spices for a flavorful chicken dish which will impress your dinner guests.

Serve them with black or pinto beans, sprinkled with more NM Red Chile Powder. We’ll also serve them with a side salad, or a Southwest rice dish. Enjoy!

Serves 4

Ingredients:
4 Medium or 2 Large Boneless Skinless Chicken Breasts
½ Cup Olive Oil
Juice of one Lime
3 Tablespoons New Mexico Medium Red Chile Powder
2 Teaspoons Minced Garlic
¼ Cup Finely Minced Onion
2 Teaspoons Kosher Flake Salt
2 Teaspoons Freshly Ground Black Pepper

Directions:
If the chicken breasts are too thick, pound them flat a bit so they cook faster. If using 2 large ones, slice horizontally to make 4 cutlets, which will cook faster and more even.

In a small mixing bowl, add the olive oil, lime juice, New Mexico Chile Powder, garlic, and onion. Whisk to combine. Place chicken breasts in a resealable freezer bag. Pour the marinade over the chicken. Seal the bag and toss the chicken inside the bag to coat evenly. Refrigerate for 1 to 3 hours, turning over at least once. Grill for 3 to 4 minutes on each side over a medium-hot grill until they have a nice char, and the internal temperature reaches 165ºF. Watch so they don’t overcook and dry out or burn. You can also bake at 425ºF for about 20 to 25 minutes or until the internal temperature reaches 165ºF degrees.

We like to serve with black beans sprinkled with more NM Red Chile Powder, and a small mixed greens salad. Enjoy!
