Italian Parmesan Chicken Breasts

These Italian Parmesan Chicken Breasts make a great dinner dish or a tasty chicken sandwich. It just depends how you prepare them….flattened or not. When it comes to seasoning the chicken, Italian seasoning works especially well, since the spices and herbs compliment chicken so well. Also, with Italian Dressing Seasoning you don’t have to hope you have everything you need for the recipe. It’s all in one blend. And if you want to tweak the blend a bit, you can add a bit of Crushed Red Pepper, or Crushed New Mexico Red or Green Pepper for a zippy touch.

6 Small to Medium Boneless Skinless Chicken Breasts (about 1-½ lb.)
1 oz. Dry Italian Dressing Seasoning
½ Teaspoon Granulated Garlic
½ cup Freshly Grated Parmesan Cheese

Preheat oven to 400°F.
Mix Parmesan cheese, Italian dressing mix and granulated garlic in a larger mixing bowl. Moisten chicken breasts with water. Dredge the chicken in the Garlic/Italian Dressing/Cheese mixture. Place the chicken in a single layer on a baking dish. Bake for 20 to 25 minutes or until chicken is done with an internal temperature of 165°F.

Prepare as a Sandwich:
If you want to serve as a sandwich, pound the chicken breasts to about ½” to ¾” thick first. Prepare the same way, but cook about 5 to 10 minutes less. They are thinner, so watch the doneness to make sure they don’t overcook and dry out. Serve on an onion or kaiser roll with sliced tomatoes, lettuce and honey mustard, mayo or topping of your choice.
