Paris Quiche

Quiche is a quintessential French egg dish, and not just for breakfast. There are many versions but all have many of the same ingredients. Our Paris Quiche is based on the classic versions. We use our Paris Seasoning which adds a wonderful herby flavor which compliments the eggs and other ingredients. We also use Half and Half instead of just milk, so the texture has the creamy, custard texture you are looking for. Our Paris Seasoning is a very versatile herb blend which works well with most egg dishes, fish, rice, noodle and many vegetables.

A quiche is traditionally served with small side salad, or mixed fruit. Some also add a slice of a crusty bread or muffin. Enjoy!

Serves 4 to 6

Ingredients:
½ Cup Cooked Ham, Diced. We buy a thick ham slice.
1 Cup Shredded Swiss Cheese, or Mild or Medium Cheddar Cheese
½ Cup Onion, Minced
1 9″ Prepared Pie Crust
4 Large Eggs, plus 1 Additional Egg Yolk, Slightly Beaten
1 Cup Half and Half
2 Tablespoons Sheffield’s Paris Seasoning
¾ Teaspoon Sea Salt
½ Teaspoon Freshly Ground Black Pepper
¼ Teaspoon White Sugar
⅛ Teaspoon Cayenne Pepper
Chopped Fresh Parsley
Chopped Pimento Peppers

Directions:
Preheat the oven to 350ºF. Place pie crust in 9″ glass pie plate. Crimp he edges if you like, and set aside until needed.

In a medium mixing bowl, add the diced ham, Swiss or cheddar cheese, and onion. Toss to combine then spread evenly in the pastry shell.

In a large mixing bowl, add the eggs, half and half, Paris Seasoning, salt, black pepper, sugar, and cayenne pepper. Whisk to just combine . Pour mixture into pastry shell.

Bake in the preheated oven for 45 to 50 minutes, until a knife inserted a couple inches from the edge comes out clean. Check after 45 minutes. If it doesn’t come out clean, bake another 5 minutes. Don’t over bake. It should have a creamy custard texture and don’t overcooked and dry.

Allow quiche to rest 10 minutes. Cut into wedges, and garnish with parsley and chopped pimentos. Enjoy!
